Ingredients

Unsalted butter
1/2 cup
Sugar
1 cup
Egg
1
Ripe bananas
2
Baking soda
1 tsp
Flour
2 cups
Salt
pinch
Toffee chips
1/2 cup
Cardamom
1/2 tsp
Apple pie spice
1 tsp

Steps

  1. Cream together butter and sugar into mixing bowl until fluffy. Add in the egg.
  2. Using two ripe bananas, I mashed them up with baking soda.
  3. In a separate bowl, mix the flour with the apple pie spice, cardamon and a salt.
  4. Then add the dry ingredients slowly until well mixed.
  5. Stir in the toffee chips.
  6. Drop in dollops onto a parchment paper or foil-lined baking sheet.
  7. Bake for 11-13 minutes or until the edges are golden brown.
  8. Cool completely on a wire rack.

Check on cookies 3 minutes before of baking time. If brown on the edges, turn off oven and let bake until end of baking time.
